
If you haven’t use the good ol’ “packet soup mix” as a substitute for stock, now is the time. I think it adds just that bit extra when compared with stock.
Ingredients:
- 750g lamb, cubed
- Oil for frying
- 1 onion, sliced or chopped
- 3 cloves crushed garlic
- 1 pkt French Onion Soup
- 1 cup button mushrooms
- 1 cup sliced celery
- A few diced potatoes
- 1 can tomatoes
- white wine
What to do:
Heat a little oil in a deep sided pan on high & fry 1 onion for 1-2 mins. Remove, set aside. Brown meat in batches. Return browned meat and onion to pan. Add some crushed garlic, french onion soup mix, mushrooms, potatoes and celery. Pour in a can of tomatoes with their juices and a slurp of white wine. Simmer for 1 hour. This recipe also works well with shanks.
Serve on rice with vegetables or salad. Can also serve with pasta (but leave out the potatoes in the recipe).
