Ingredients:

• 2 kg ground Pork
• 1 tbs sea salt
• 3 tsp fresh ground pepper
• 1 tbs minced garlic
• 2 tbs finely chopped fresh Sage
• 1 tbs finely chopped fresh Thyme
• 2 tsp finely chopped fresh Rosemary
• 2 tbs brown sugar
• 1 tsp ground Nutmeg
• 1/2 tsp ground Cayenne

We will hang the sausages for you and refrigerate at least overnight to develop the flavours. This is one recipe that we love. It is super simple and tastes great. You can vary the mix as per your taste. My cousin add currants to this recipe for special occasions.
